This is the best way to cook potatoes. It is seriously addicting. They are sweet, they are salty, and they have those punches of flavor from the mustard and onion. I usually serve these potatoes along side a nice steak. What really makes this dish is the honey butter sauce. Mix these two flavors together, and it’s like your back in grandma’s kitchen, eating homemade biscuits with freshly made honey butter. There’s no two flavors that go together quite so well as honey and butter. Throw in that flavor punch from the dijon mustard, and this is now a lick-the-bowl worthy sauce.
Potato Options: Red potatoes are a favorite around here, but you could really use any kind of potato. If you’re feeling adventurous, you could even try sweet potatoes. Dairy Free: If you’re looking to make this dish dairy free, all you need to do is swap out the butter with a plant-based butter stick. Make sure to use the butter sticks, and not a margarine or tub-based butter alternative. Storage and Reheating Instructions for Honey Roasted Potatoes: You can store your potatoes in the refrigerator for up to 4 days. To reheat, either put them in the microwave or add a tablespoon of oil to a skillet and reheat on the stovetop over medium heat until warmed through.
